You can take only the courses you are interested in, but you will not be able to obtain the Junior Tea Analyst qualification, so if you want to obtain the Junior Tea Analyst qualification, please take all 12 courses.
The "Afternoon Tea Course" also serves as a graduation ceremony, so only those who have attended all courses can attend it.
